We Are Not Growing Fewer Vegetables We Are Growing Fewer Varieties

A market can look full while offering a steadily narrower pantry.

Tomatoes have not disappeared, but many distinct tomatoes have. We still find peppers, onions, potatoes, and squash, yet we encounter fewer varieties of them in daily life.

A 2026 paper published in Proceedings of the National Academy of Sciences compiled a list of 1,482 edible vegetable species. Modern food systems, however, depend on a much smaller group of widely commercialized crops.

Long supply chains favor varieties that yield heavily, ripen at the same time, tolerate transport, remain stable in storage, and meet uniform standards of size and appearance. Other varieties may offer exceptional flavor, adapt better to a specific climate, or belong to a local culinary tradition. Without regular buyers, however, they become difficult for farmers to keep growing.

The loss unfolds gradually. Demand falls first. Then the variety is planted less often. Eventually, its seed may no longer be reproduced.

When a variety disappears, we lose more than a color or flavor. We may also lose disease resistance, tolerance to heat or drought, distinct nutritional qualities, and culinary knowledge built over generations.

Seed conservation is essential, but storage alone is not enough. Seeds must also be planted, exchanged, sold, cooked, and chosen. Chefs and consumers help determine whether diversity remains part of a living food system.

A variety often disappears from demand before it disappears from the field.
