Chef Randy Siles Showcases Tico Gastronomy at Three-star Michelin Restaurant Christophe Bacquié

Siles was invited by Petit Futé and will cook with Michelin-starred chefs

Randy Siles Leandro – Chef Ambassador of Costa Rica’s National Plan for Sustainable and Healthy Gastronomy – was invited to participate in the launch of the prestigious French collection of world travel guides, Petit Futé for the Department of the Var in the Provence-Alpes-Côte d’Azur region in Provence, France.

More than 300 people attended the event held at the three-star Michelin Restaurant Christophe Bacquié in the Hôtel Du Castellet.  This is the first time in the history of Costa Rican gastronomy that a Tico chef cooks in the company of prestigious French Michelin-starred chefs.

Siles presented a two-course menu that reflects innovative cuisine with Costa Rican identity. The first course consists of a mollusk ceviche with air of passion fruit and smoked sand fish scales, tuna roll stuffed with a truffle guacamole, soy sauce and passion fruit, as well as a sweet dish called tico bruleé (arroz con leche on a coffee soil and passion fruit capuccino).
