With a holistic vision of agroecology and gastronomy rooted in the zero kilometer cooking philosophy, the local culture and traditional culinary knowledge of each region, Autóktono and the Finca Integral Educativa San Francisco de Asís in Copey de Dota forged the new alliance DE RAÍZ (root out) to bolster the gastronomic heritage and food sovereignty of Costa Rica. Under the new alliance, Autóktono with executive chef Randy Siles at the helm, will be managing Finca San Francisco de Asís’ Zero Kilometer cuisine restaurant, La Tolva (tolva, a tool used by our ancestors to grind the corn and other grains). La Tolva will also be Autóktono’s Research Laboratory and Educational Center.
